On World #OliveTreeDay, we had the pleasure of interviewing Emmanuelle Dechelette — olive oil sommelier and founder of the OLIO NUOVO DAYS festival at La Table des Savoirs conference at the Sorbonne Université. We spoke about the unique character of fresh olive oil, its vibrant aromas, and the importance of celebrating the beginning of each new olive oil season.

Declared in 2019 during UNESCO’s 40th General Conference, World Olive Tree Day is celebrated every year on hashtag#26November. Today’s focus is on new olive oil, however beyond its agricultural value, the olive tree — and its iconic branch — has symbolized #peace, #wisdom, and #harmony since ancient times
